In general, I do find churches a challenge, since you can't take tripods, and there's always a lot of people milling around, and the lighting can be almost anything!! (in this case I do have a special 'low profile tripod' which works really well.)
As for the candles, only the red ones are real candles, the yellow are electric light bulbs!! But as you say, the exposure is never right!!
