These are just like the moonshine stills that I imagine your hillbillies keep in their garages, only a bit bigger. The whiskey goes through a number of distillation vessels, which you can see here on the right..
At the end of the tour we got a free sample.. with the option of buying as much as we wanted!

This is a little bigger than any of the Scottish ones I saw, and the air inside is hot, damp, and funnily enough, smells of whiskey!

Your Bushmills has traveled down that pipe after being boiled off in those copper stills. The process is repeated a few times, each still producing a more refined mixture, before it goes to the next..
You are right about the smell too!!!
