Where I grew up (Northern England) chips with gravy was popular. Prior to the introduction of cardboard trays one took one's own bowl down to the 'chippy'!

Another alternative was to have 'chips with soup on' - the 'soup' in this case was not soup as such but was the liquid from the pan where the green peas where cooked. The warm liquid made the chips soggy! A few peas sometimes got included by default.

You were being environmentally responsible before the term had been invented, David. The poutine variant, poutine galvaude (with peas and chicken), is supposed to have been invented to appeal to English-speaking people. Reputations die hard.
