One of my favorite vegetables to eat in salads or as a snack is a mini sweet pepper. They come in three colors: red, orange and yellow. Good ones are sweet and juicy, like the above.

A wonderful picture here, Val. I quite like sweet peppers, but certainly not as a snack. I enjoy them in salads as well as cooked meals, but not enough to have them raw as a snack.
