La pittoresca Tour des Bouchers per secoli ha svolto il ruolo di accesso difensivo fra la parte alta e bassa della città: infatti nel Medioevo il borgo fu diviso in quattro zone fortificate, collegate da torri e porte che consentivano un passaggio controllato da un distretto all’altro. Questa torre in particolare, oltre che da punto di avvistamento, fungeva anche da campanile e da prigione. Il suo nome, Torre dei Macellai, deriva ovviamente dall’attività della congregazione dei macellai che svolgeva l’attività in questa zona. For centuries, the picturesque Tour des Bouchers served as a defensive gateway between the upper and lower parts of the town. In the Middle Ages, the town was divided into four fortified areas, linked by towers and gates that allowed controlled passage from one district to the other. This tower in particular, as well as being a lookout point, also served as a bell tower and a prison. Its name, the Butchers' Tower, obviously derives from the activity of the butchers' congregation that carried out its work in this area. Its construction took place in two different periods: the lower part was built in 1290, while in 1536 it was decided to continue up to a height of 29 metres.
