Some other recipes included: Shrimp Curry, Tuna Casserole (for your less important callers who don't rate the Sole En Champagne, I guess), Fish Casserole Spanish style, Picadillo, and Meat Loaf Supreme. I think it's only this recipe that has Maraschinos all over the place, though. So that's good.

"...Mix half cup butter with flour thoroughly. When fish is baked, gently lift fillets, mushrooms, and carrots from the pan with slotted spatula. "Set fish on a plate to drain. Cover with foil to keep them warm. Drain the broth from the baking dish into a saucepan. Place over medium heat and add the butter and flour mixture little by little, stirring constantly with a wire whisk until sauce is smooth and thick enough to coat the whisk lightly. Stir in cream and lemon juice. "Spoon about 1 cup of the sauce over fillets. Sprinkle with chopped parsley and serve with lemon wedges. Pass the remaining sauce separately. Serves 6."

"...See that the shrimp are covered with sauce and bake 10 more minutes at 350. Serves six." Even without a date given, the color scheme alone would shout "SIXTIES!" Wouldn't it? Some other recipes included: Chicken Divan, Breast of Chicken With Wild Rice And Orange Sauce, Turkey Tetrazzini, Chicken Fricassee, Chicken Cacciatore, and Chicken Royale.

Compiled by Evelyn Loeb, with illustrations by Maggie Jarvis. No poetic intro here. Also, way fewer illustrations per book than there were in the Fifties. Still some nice work, though. Front and back covers of a 62-page hardback, published by Peter Pauper Press, Mount Vernon, New York.

This little book contains many new variations as well as some of the old standbys and will prove to be a friend in need on short notice..." Uh, I'm pretty sure that should've been "a friend in deed. "Many gatherings start with drinks and snacks and go right into the roast or casserole, continue with a salad and end with dessert and coffee..." Who else has had the "Magic Fish" vision after one too many aperitifs? Okay, fine. It's just me. :o
