German Food made in US restaurants

In the USA, there are some (native / 2nd gen) german restaurants and they work hard to replicate the authentic german taste. That isn't always easy as US has import restrictions and US health code differs from Germany & EU.
The restaurants have to tailor their menu to the local (american) taste and available ingredients. Therefore you will find some types of "Schintzel" and a small selection of sausages and a dozen different beers.
In most cases, the quality is very good but as mentioned above, the SELECTION IS LIMITED for understandable reasons but I wish they would add 2 or 3 more regional specialties to their "typical german" menus.

PS : At times I don't know if I should laugh or cry when the restaurant staff speaks spanish and some english but doesn't understand a single german word (not even the german names listed on the menu).
