Spice cake and ..

recipe of few ingredients .. pecans/walnuts - whatever kind you like .. brown sugar .. vanilla cake mix - used a yellow cake mix .. 3 large eggs beaten .. 1 - 29 oz can sweet potato pie filling - Bruce's has all the spices in it .. grease a 13x9 pan with butter .. sprinkle nuts over that, then top with brown sugar .. really think the amount stated to use would be too sweet .. just put what you think is okay for you .. in a large mixing bowl, blend cake mix - eggs - sweet potato pie filling .. spoon over nuts and brown sugar .. bake for 65 min @ 350 deg F .. - the 1st Monday in December - Senior Orphans Christmas Dinner will happen - so much work done throughout the year - all by volunteers - nobody takes a salary - this is one of those ' you do it because it is the right thing to do ' - these are some of the photos from 2010 - from decorations - to volunteers getting table assignments - and the joy from a local dance studio - performing selections from "The Nutcracker" - these Seniors are served - a meal from appetizer through dessert - perhaps the only time all year - so, tonight, we will do this again - giving a part of ourselves, yet receiving so much more back - then, this Saturday --- - well, I'll take photos for you - Part II ( Part 1 is PiP ) Archive Airings - Holiday Past AA223 © All rights reserved

Spring Salad ..

- for supper - cooked penne pasta / used brown rice G.F. [ G luten F ree ] - drain pasta; plunge in cold water to stop cooking; drain again - tear fresh Spinach / or greens of choice in dish - add healthy size scoop of potato salad - place cooked pasta over this - add veggies of choice - used broccoli, zucchini and slivered onions - slice a hard cooked egg - put across the salad - add color and crunch with shredded carrots - top with Feta cheese - made a lemon/olive oil dressing with herbs - this would have been perfect with some flatbread ! - happy eating ~ .. please note: this is just a guide.. to me, that is what a recipe is. .. a guide.. build it/delete parts/add to .. it is all your choice in this ... there is nothing crucial (like bread not rising) in this salad.. make this your own Spring Salad .. that is what I did .. this is not the original, yet it is my original .. - signed in: www.picMonkey.com © All rights reserved

to take a photo of my entree .. was too hungry... so, this is where we went to celebrate the birthday of a dear friend ... what did I have...? ah, Salmon Santorini... three pieces of Wild Alaskan Salmon layered with fresh tomato slices and slices of feta cheese ! think the sauce was lemon with some herbs.. had Greek potatoes with it ! it was really good ! maybe next time I won't be so starved & will photograph the feast before diving in ! good food... great friends... it doesn't get any better ! ^SOOC *cropped only for size © All rights reserved

Christmas boxes for Polk County Senior Orphans.. Each client, who has requested a Christmas box and gifts, has his/her name place on the outside of their box. The caseworker then sees that the box of Christmas goodies gets to its destination. Polk County Senior Orphans is an non-profit group; it is staffed by all volunteers.. no one takes a salary..period! This 'boxing day' is done before Christmas, but Senior Orphans is a year round operation. All items are donated or purchased with donations. Donated clothing; canned goods; non perishables are kept inventoried in a storeroom. There is a list of seniors that one can 'adopt' for Christmas; this list has 3 items the senior requests. Items like pajamas, towels, blankets, box fan... things we usually take for granted. But, these seniors, having very limited income, don't..they must be frugal. We all were tired after working about 7 .5 hrs, but knowing you can help make a difference somehow makes you feel good. ©SD All Rights Reserved

The chutney begins..

cooking on the range.... Spicy Cranberry Chutney Need: 1/4 c. chopped dried apricots (snip with scissors) 1/2 c. brown sugar - packed 1/2 c. light raisins - the gold ones 1 c. water 3 c. fresh or frozen cranberries - rinsed 1 Granny Smith apple - chopped 1 tsp. lemon zest ( I used orange.. use what you have) 1/4 c. lemon juice ( used a combination of lemon and lime ) 1/4 c. crystallized ginger - snip with scissors 1/2 tsp. red pepper flakes In saucepan: Bring to boil apricots, brown sugar, raisins and water. Reduce to simmer for 5 min.-- stirring occasionally. Stir in cranberries, apple, zest -- simmer about 10 min. more. Stir in lemon juice, ginger, red pepper flakes before removing from heat. Mixture should be somewhat thick. Serve chilled over cream cheese block with crackers; as a side with turkey, chicken or pork. Recently tried it with cream cheese/Greek yogurt block -- oh, yes !! ---------------------------------------------------------------------- The 2nd part: (haven't done this, so can't say if it's good or not.. seems that it would be) Need: 2 ( 8 oz ) softened blocks cream cheese 1/2 c. spicy cranberry chutney 1/2 tsp. mustard powder 1 1/2 T. curry powder 1/2 c. sliced almonds (or whatever you like) toasted slightly Mix: In med. bowl softened cream cheese and chutney until blended. Add mustard powder and curry. Mix well. Chill overnight. Roll chilled mixture into a ball; roll in the toasted nuts to coat. Serve with crackers or veggies. © All rights reserved
