Gluten free flour tortilla -
Inside is an egg and a couple strips of bacon -
Really enjoyed it -
Do NOT like the high prices of Gluten Free items -
To some Companies, Gluten Free seems to be a 'fad' -
But, if one has problems with wheat/gluten -
You make everything from scratch -
Or do without -
When I saw these GF flour tortillas -
I went by -
The next week, figured I'd only have one at a time to make them last -
They are as good as the regular flour tortillas -

Fudge Brownies - GF = Gluten Free - - Awesome - - 350 deg
(13 x 9 pan)
Ingredients :
2/3 cup cocoa
2 cups sugar
2 cups gluten-free flour blend* - used combination of Gluten Free flours on hand -
2 tsp xanthan gum
2 tsp baking powder
1/2 tsp salt
4 eggs
2/3 cup oil
1 tsp vanilla
1 cup chopped walnuts (optional)
Instructions :
1. In a large bowl, mix cocoa and sugar with a wire whip until thoroughly mixed. Stir in g.f. flour, xanthan, baking powder and salt.
2. In a large bowl beat eggs lightly. Add oil and vanilla.
3. Combine all ingredients. Stir with a large spoon until well combined. Spread into a greased 13x9x2-inch baking pan.
4. Sprinkle 1 cup nuts over batter (or 1/2 cup nuts over half the pan and leave the other half without for those who don't want nuts).
5. Bake at 350 for 25-30 minutes. When cool cut into squares.
Awesome!!!
** To make a Choc. Frosting - use choc. chips sprinkled on top after removing from oven; spread with a spoon to cover the brownies.**
No idea where I found this, but have tested it and it certainly doesn't last long !

baked tortilla chips -
some are plain -
others are spinach based -
spray with Olive Oil on both sides -
place on cookie sheet -
lined with foil -
sprinkle with salt or other spices -
bake @ 350 degrees for 8 minutes -
remove and cool on a rack -
these are gluten free -

Gluten Free Irish Soda Bread
2 c. all purpose gluten free flour OR 2c. Bob's Red Mill Pizza Crust Mix [don't use the yeast packet]
1/2 t. salt
1 t. baking powder
1 t. cinnamon
1/2 t. nutmeg
1 T. honey or sugar
1 T. cold butter / / I used coconut oil
1/2 c. currants or raisins
2 eggs
1 c. minus 1 T. coconut milk
1 T. apple cider vinegar
1 T. mayonnaise [ I used plain yogurt ]
* 2 t. baking soda *
Extra flour to shape loaf; milk to brush on loaf before baking.
1. sift dry ingredients together except not baking soda ; place in medium bowl.
2. work in butter with hands; add currants
3. in a small bowl, add cider vinegar to milk and pour into dry ingredients.
4. add mayo, eggs and mix just until combined.
5. ADD baking soda and mix just until combined.
6. dough is sticky; can put on gf floured board and shape into a round loaf [ or - dump it all out onto a parchment lined cookie sheet - wet your hands and shape it.]
7. score an "X" on top of loaf
8. brush with milk
9. bake at 375 degrees for 35-45min. or until Golden !
This is good stuff !!! Half the loaf is gone already!
