We call this type of construction 'Wattle and daub'. It is a composite building method used for making walls and buildings, in which a woven lattice of wooden strips called wattle is daubed with a sticky material usually made of some combination of wet soil, clay, sand, animal dung and straw.
Many old buildings (now updated) have been created using this method, and have a preserved panel inside the building covered in glass that shows the original construction.

for your comprehensive description. I think, I have heard about this method of the Middle Ages years ago (on TV) but never saw this in real bevor.
