I always try to find new ideas for photography, and pixelation is one of them. Here's a very inspiring artist. Daniel Rozin makes "mirrors" from somewhat any materials and surfaces, and gives a new perspctive on pixelated images.
One possibility then is to try find a software that produces different shape of "pixels", other than just squares or dots.
