Another rainy day here so being cabined up I thought about having a baking day. I ummed an aaahed as you do and in the end I only managed to get some scones done. I have a twist on scones I do on the odd occasion so this being an odd occasion that's what I did. It is just the normal scone mixture you normally make but I use bread flour and bicarb instead of self raising flour,I also add a little more butter than the recipe states.There is maybe another name for them but I don't know
The trick is not to knead the life out of it and leave it in the fridge to cool before baking. This recipe gives the scones a sort of soda bread come cakey taste and texture lovely hot out of the oven with lashing of butter.
