Ad cooked Delia's head for about 6 hours, then removed the meat, before continuing to cook the rest to enrich the stock and extract the maximum amount of gelatine.

Delia was one of our Large Black pigs. We kept her head for a second crack at making brawn (alias "head cheese"). Ad is channelling Delia here, with the help of a home brew.
