Helianthus tuberosus, conosciuto qui da noi anche come rapa tedesca o carciofo di Gerusalemme. E da Manel nyàmera :) Il nome generico (Helianthus) deriva da due parole greche ”helios” (= sole) e ”anthos” (= fiore) in riferimento alla tendenza di alcune piante di questo genere a girare sempre il capolino verso il sole, comportamento noto come eliotropismo. Il nome specifico (tuberosus) indica una pianta perenne, il cui organo di sopravvivenza è un tubero. I tuberi di topinambur si raccolgono in inverno, sono molto nutrienti e la cottura di solito è simile alle patate, ma io li cuocio in umido, lasciandoli un po' al dente; infatti il tubero può essere consumato anche crudo con sale e pepe.
