Cheese from Leiden is lower in fat and is flavoured with cumin and caraway seeds. It has one sharp and one round edge and it is branded with the two crossed keys, the coat of arms of Leiden.

Farm-Made Leyden Cheese. It has a lower fat content than Gouda Cheese and it is flavoured with cumin seed. The low fat meant it keeps longer, which was very useful on long sea voyages of the Dutch East India Company.
