Okay, I actually persuaded a picky ten-year-old that golden beets, fried up in butter with lots of salt, were almost like french fries.

A magenta heart to greet February! Beets and red cabbage from recent CSA boxes. Recipe suggested by my friend Rubi and cobbled from several online (just four ingredients: shredded beets, shredded red cabbage, garlic powder, and a small amount of mayonnaise). I didn't think I liked beets. Now I think I love them.
