Summer lunch, at the cottage

I see the tomatoes. I see the mozarella. I don't see the basil!
Anyway a fine looking spread!

We replace the basil with pumpkin jam! It's used in Portugal, jam with fresh cheese! It's good!

Sounds great! I'll see if it's available in Spain. But even if it is, I won't be able to have it because of the high sugar content (diabetes), but I would have a tiny tiny taste purely out of scientific and culinary interest!

Just a bit isn't dangerous for your diabetes! :)

As I said, but I have been very carefull these past 20 years and the results do show in my blood sugar readings. The only thing I'm a little bit naughty with is that I insist on a glass (or three) of good wine with a meal. A meal just isn't civilised without it and wine has long been a serious hobby of mine. But there again, everything in moderation!

You've to take close control of your physical status, no doubt. When you talk about a glass or three of wine a meal you show you're a refined man, with good taste. I'm a member of two wine clubs in Portuga, through them I buy/collect excellent wines at a good price.

My parents ran an award-winning wine shop in London and I used to help out at busy times (weekends, Christmas) and at wine tastings. I continued my 'cata' experience in Madrid where one of my Business English students owned a superb wine shop. I ended up helping him with his wine tasting evenings! This might resume after a gap of three years as I spoke to him last week and who knows? ...
