Die typische Piccata alla milanese ("Piccata Mailänder Art") wird wie auch das original Wiener Schnitzel aus Kalbfleisch zubereitet. Mit einer Panade aus Mehl, Eiern und würzigem Parmesan, goldgelb gebacken und traditionell auf Spaghetti mit Tomatensauce serviert, ein italienischer Klassiker in jedem Ristorante.
Piccata ist ein Begriff aus der italienischen Küche und bezeichnet eine kleine Scheibe, die in der weiteren Zubereitung, paniert oder unpaniert, gebraten wird. Ein Piccatastück (Scheibe) sollte ein maximales Gewicht von ca. 30–40 Gramm besitzen. Für Piccata kann außer Fleisch (Schwein, Rind, Geflügel, Innereien) auch Fisch (Lachs) und Gemüse (Zucchini, Kürbis, Sellerie) verwendet werden.
