spinach & potato frittata

Spinach & New Potato Frittata

4 large eggs
1 bag of spinach, cooked and chopped
1 banana shallot, chopped and cooked
a few new potatoes, cooked and sliced
grated cheese
some crème fraîche
salt & pepper
fresh thyme

top with some more grated cheese,
and a dribble of double cream
and freshly grated nutmeg.
