Russian Olivier Salad, served here accompanied by some Lollo Rosso


A French cook named Lucien Olivier, who ran a restaurant in Moscow in the 19th century, is considered the inventor of Russian salad. Although he took the original recipe of the salad's sauce to his grave, today's Russian salad as we know it - potatoes, green peas, cucumber, carrots, chicken, eggs etc., with lots of mayo of course - is known as Olivier in countries of the former Soviet Union. And it is a must-eat on New Year's Eve (which is the date this picture was taken).
