Yet again wind and rain have rocked the Ship although despite the weather, I’ve had a few good nights recently. By good, I mean around 4 hours uninterrupted sleep, followed by snatches of an hour here, half hour there; it all adds up.
After last week’s debacle with not being able to park in my street, let alone outside my house, today (Thursday) the street is almost empty, and I guess the poor weather put many off walking the short distance into town. I’ve done my shopping, parked outside the house, and apart for collecting my son in the evening, I won’t be venturing outside again. It’s nasty out there!
Some good news - exceptional news really, I had a call today offering me an appointment for cataract removal. Again, there was a choice of hospital and I chose the one I’ve been to before which is a small, privately run hospital. By happy coincidence, this hospital also has the earliest appointment. Wait for it… Early March. I’m delighted! I’d been told I could be waiting 4 or 5 months for this, though I filled in a questionnaire about my independence, and how being unable to drive will impact on that, and I guess a spot has opened sooner than expected. The only downside is that it’s too far to walk and I’ll have to get a taxi both ways. Also, it’s only a few days before my neurology appointment too, so depending on how it goes and what they say, I may have to get a taxi to and from that appointment as well. The next appointment was a month later and I don’t want to wait as my sight is really bugging me. I’m able to claim back this expense though it could take a while to be reimbursed. I’ll check bus routes too, as they might be easier and of course cheaper, though both routes are on a major A road, and I’ve never seen a bus on those routes to date. Just a shame that my son can’t drive and no family live close enough to help me. We take the rough with the smooth.
Apart from the above, not a lot is going on at the moment. We had an unsatisfactory baking session at the weekend in that we ‘tried’ to make cinnamon buns. I’ve tried before, and they were so greasy they went in the bin. My son tried a different recipe this time. The recipe didn’t state what flour to use, so he used plain and they didn’t rise and were dry and pretty tasteless. They too went in the food bin. Next time we want those, it’ll be a trip to Tesco’s (supermarket) as they do a delicious version. Not healthy, I know, though a treat now and again is allowed lol. He did make pizza which, as usual, was very good and so much better than anything we’ve had from the shops or takeaway, cheaper too. At the weekend he’s making a sweet and sour dish. It’s great having a son who can cook, and of course allowing him to, is good practice for when he strikes out on his own or has a partner to share cooking with. I’m only thinking of him… ;)

I think you have to use bread flour to make cinnamon rolls, I may be wrong. If not, then self-raising flour definitely. It's worth trying again. Maybe you could google Paul Hollywood's bakery tips.
